Tagine with cod
A tagine is originally an earthenware stew pot, it is widely used in recipes from Moroccan cuisine. Don't have a tagine? You can also use a frying pan with a lid.

Main course

For 3 persons

Ingredients:
- 500 g Cêlavíta's firm potatoes
- 3 tbsp olive oil
- 100 g carrot, peeled and sliced,
- 1 onion, cleaned and cut into half rings
- 3 cloves of garlic, cleaned and sliced
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 1 tsp paprika powder
- 1 tsp cumin seeds
- 1 chilli pepper, cut into rings
- 400 g diced tomatoes in juice
- 1 vegetable stock cube
- 150 ml hot water
3 tbsp olives - 3 slices of cod à 100 g each
- Turkish bread
Preparation
Step 1:
Heat the tagine with the olive oil. To this, add the carrot, onion, garlic and two-coloured peppers. Fry this for about 2 minutes. Then add the potato, paprika, cumin seeds and chilli. Fry this for about 3 minutes.
To the tagine, add the diced tomatoes, vegetable stock cube and water. Put the tagine on low heat and stir well. Warm the tagine with the lid on for 15 minutes on medium heat.
Step 2:
Add the olives to the tagine and place the cod fillets on top. Put the lid back on the tagine and continue cooking for about 10 minutes.
Meanwhile, bake the Turkish bread according to instructions on the packet. Serve the tagine with Turkish bread for dipping.
