

Potato salad with smoked chicken, mango and curry mayonnaise
A fresh potato salad with curry mayonnaise and tropical mango.



Ingredients:
- 450g CêlaVíta mini potatoes or potato cubes
- 1 small red onion, chopped
- 1 mango, peeled and diced
- Lamb's lettuce and cress for garnish
- 150 g smoked chicken breast, sliced
For the curry mayonnaise:
- 2 tbsp sunflower oil
- 2 tsp curry powder
- 1/2st clove of garlic, grated
- 1 tbsp ginger syrup
- 2 tbsp mayonnaise
- 1 tbsp crème fraîche
- Pepper and salt, to taste
Preparation
Step 1:
Heat the sunflower oil in a small saucepan. In it, fry the curry powder and grated garlic for about 1 minute. Spoon the curry oil into a mixing bowl to cool.
Step 2:
Blanch the potatoes; Bring a large pan of salted water to the boil. Cook the potatoes for 3 minutes, then spoon them into a large bowl to cool.
Step 3:
When the curry oil has cooled, you can finish the curry mayonnaise by mixing the ginger syrup, mayonnaise and crème fraîche into the curry oil. Flavour the mayonnaise with salt and pepper.
Step 4:
When the potatoes have cooled down, you can mix them with the chopped red onion, diced mango and curry mayonnaise.
Divide the salad between plates, serve with some lamb's lettuce and cress. Serve the sliced smoked chicken breast on top.
Variation tip: Dice the smoked chicken to mix into the salad and you have a tasty salad for BBQ or gourmet. Replace the chicken breast with fish or boiled egg if you don't eat meat.
