

Cauliflower steak with potatoes
In this recipe, you will learn to make cauliflower steak, with delicious, tasty potatoes from the oven. A plate full of vegetables!



Ingredients:
- 1 bag of CêlaVíta fresh half-skinned baby potatoes
- 1 cauliflower
- 2 tbsp olive oil
- Pepper and salt, to taste
- Parmesan cheese, to taste
- 100 ml milk
- 2 tbsp butter
- Pinch of nutmeg
For the garnish:
- 50 g hazelnuts
- 30 g arugula
Extra needed:
Oven, baking tray, baking paper, food processor or hand blender
Preparation
Step 1:
First, cut the cauliflower into 2 nice slices about 4 cm thick. Place these on an oven dish lined with baking paper, brush with some olive oil and season with pepper and grated Parmesan cheese. Around the cauliflower steaks, divide the potatoes, which you sprinkle with olive oil and salt and pepper. Cook the steaks (and potatoes) in a 200 °C oven for around 25 to 30 minutes. Turn the steaks once after 15 minutes.
Step 2:
Cut the rest of the cauliflower into small pieces, put the pieces in a small suitable pan. To this, add the milk and a tablespoon of butter. Cover the pan and cook the cauliflower just until tender. Then drain the cauliflower, but save the cooking liquid for a while. Puree the cauliflower smooth with the food processor or hand blender, adding some of the cooking liquid to make it smoother. Flavour the cauliflower mousseline with grated Parmesan cheese, pepper, salt and a pinch of nutmeg.
Step 3:
In the meantime, while the steaks and potatoes are in the oven and the leftover cauliflower is cooking, you can brown the hazelnuts in a small frying pan. Melt a tablespoon of butter, brunette the hazelnuts in the butter over medium heat, stirring constantly. Scoop them out of the pan immediately to cool.
Step 4:
Serve the cauliflower steak and mousseline with the potatoes, rocket and the roasted hazelnuts.
Variation tip:
The hazelnuts can also be roasted in the oven with the cauliflower, but you will miss the delicious butter from the pan. In that case, put the hazelnuts in the oven with the cauliflower during the last 5 minutes of baking time.
If necessary, bake another Parmesan lump in the microwave as an extra treat on the plate. You do this very simply by grating the cheese in a thin layer on a plate lined with baking paper. Put the plate in the microwave, 60-80 seconds at 1000 Watts. The lump cheese will become crispy when you let it cool.
